I posted a picture of this and was surprised by how many people asked for the recipe...don't get me wrong, it's delicious but I think if I were to see it without knowing what it was, I would think what is that? A few things about this recipe-
-I don't measure anything out. A lot of it is "add to taste"
-It's got a different flavor...I don't know how to explain it, definitely not a traditional cocktail.
-If you substitute anything, it will definitely change the flavor of it.
-The sodium content can be pretty high. There is no way around that, because the juice I use is high in sodium. Meh. Take some, lose some.

| Shrimp cocktail, Mexican-ish Style. |
Ingredients:
-1 lb. shrimp, cooked and peeled
(I sometimes use 1 lb and a half to make it meatier)
-1 small tomato (or 1/2 a medium)
-1/4 red onion
-1 whole cucumber
-2 avocados
-cilantro,a little less than a handful
-Clamato tomato juice, 32oz (trust me on this one)
-2 juicy limes
-Tabasco
-salt and pepper (to taste)
...and then you'll need a large bowl to put it all in
Slice and then quarter the peeled cucumber. Cube the avocados and throw those in the bowl. Chop up the tomato, onion and cilantro. I run it through the food processor so it's usually pretty fine. Throw it all in the bowl. Add in the shrimp and mix it all up. Pour the Clamato in- really as much as you want. I pour in just enough to cover the mixture, you could pour more and it'll be more soupy. Then you just add in the lime juice, Tabasco, salt, and pepper to taste. (For me it's a lot of lime juice, a good shake of pepper, a little Tabasco, and I personally do not add salt but Pittman would prefer that I do.)
That's it! It's more of a concoction, really not a "real" recipe I guess. But it's a perfect cold soup for the summer, though this is Pittman's absolute fave so we have it often.
Someone let me know if you try it, some people really LOVE it and others HATE it.

Look at you my little chef... i would totally steal this recipe... except for the fact, I HATE shrimp. Actually all seafood (Except fish).

seriously, this looks amazing! I'm the same way when I cook, I don't really believe in measuring- unless i'm baking, that's different. Can't wait to make this one night! Especially since the only meat I eat is shrimp!!!
